Hi Melissa. Thank you for sharing your wonderful einkorn blueberry muffin recipe! It was over the moon! This was my first time using einkorn flour. I did not have almond extract so I doubled the vanilla extract and added a half cup of sliced almonds to add some crunch to the muffins. Simply delicious. I did not use muffin tin liners but simply coated the bottom of my tin with some coconut oil. I also used coconut sugar. 20 minutes was the perfect timing.
