These “Freeform Chicken Meatballs with Carrots and Yogurt Sauce” from Epicurious are another family favorite. With lean chicken, carrots, arugula, Greek yogurt, and olive oil it’s not only tasty but healthy too! Everything is simply tossed on sheet pans and cooked in the oven, so it’s quick, easy, and there’s no dirtying of the stovetop. Major win in my book!

The recipe calls for plain breadcrumbs. I usually just use Panko breadcrumbs to make it even easier on myself, and it turns out great every time.

If you’ve never heard of “garam masala,” don’t be intimidated – it’s just a spice mixture and you can find it in the spice section of many grocery stores. If you can’t find it there or just want to save some money, you can make your own easy version or get a little more authentic. I love the smell and taste of garam masala and keep it stocked in my spice cabinet for several recipes in my culinary repertoire. Wow, that sounds fancy…um, meal rotation?
