Rotisserie Chicken Salad with Charred Scallion Dressing

This is one of my family’s absolute favorites, my friends! It’s so easy, fresh, and healthy! With lean chicken, crunchy homemade croutons, crisp radishes, creamy avocado, and yummy dressing…what’s not to like?! Okay, so my two little kids (ages 3 & 1) will only eat the chicken, croutons, and radishes out of it, but at least they like part of it!

This wonderful recipe is originally from Bon Appétit Magazine and is available on the Epicurious Website and app. If you don’t have the Epicurious app, I totally recommend it – it’s free and a tremendous resource!

Here’s a tip: Did you know you can buy rotisserie chicken in bulk? While places like Costco sell it, even smaller grocery stores that cook rotisserie chickens will package and sell what’s leftover from the whole birds. I buy big packs, divvy it into 8oz portions using a food scale, then package and freeze it so I have it on hand for dishes like this salad. It’s fast & convenient! Or if you are cooking / grilling your own chicken, double the recipe, then shred & freeze half! Having cooked, shredded chicken on hand makes for quick & easy meals.
